Gooey Mixed Nut Bars

I am nuts for my hubby.  Get it nuts… nut bars.  😉  Even though Valentine’s Day is still a couple of weeks away, I’ve already asked my husband if he’ll be my valentine.  I do this to him every year and he always says it’s not time yet because he feels Valentine’s Day is the day for valentines.  Technically he’s right but it’s good to plan ahead, right?  😉 I usually post on Mondays, Wednesdays, and Fridays but I missed yesterday.  Busy?  Lazy?  Tired?  All of the above.  It was however bothering me and couldn’t leave it alone (and I’m …

Petite Vanilla Scones

These little vanilla scones are supposed to be a copycat of the Starbucks’ petite vanilla bean scone.  The question that I always ask with copycat recipes is “Does this really taste like the original?”  See below for my exciting conclusion. When I saw this recipe I instantly thought of two things.  One, they are scones… hello, of course I want to make them.  Two, they are smaller than the average sized scone so that means that I can eat one and not feel guilty (or that’s what I keep telling myself).  My husband points out that being smaller also makes …

Spicy Black Bean Soup

My husband says that a good spicy soup is perfect this time of year to warm the cockles.  (Does anyone else think that “cockles” is a weird word?) He inspired me to whip up this amazing soup.  It’s a Mexican side dish turned into a bowl of soupy goodness.  If you’re a fan of Mexican food then this is right up your alley. This pot of soup has one teaspoon of cayenne pepper in it so it’s safe to say that it’s pretty spicy.  It’s spicy enough to warm those cockles and to leave a little tingling sensation on your lips, …

Light Orange Spice Banana Bread

I love banana bread.  Who’s with me? Sure, I could make my favorite banana bread again, but I thought I’d do it up a little different this time.  You know, because that’s what us food bloggers do… take something that tastes amazing and turn it into something else that’s equally delicious (or even better if we’re lucky). I started with my Light Banana Bread recipe.  I won’t bore you again with why it’s my favorite and how it’s exactly a  “light” recipe.  Head on over to that post if you haven’t already. Then I sort of turned the banana bread into a wonderful winter delight, by adding warm spices and orange …

Dairy Free Chocolate Coconut Ice Cream

Who knew that three ingredients could turn into an insanely delicious ice cream?  I didn’t (at least not until now). This is my first time working with canned coconut milk before.  With it being a new year and all, I figured that this was as good a time as any to try it.  I’ve seen it used in so many ways that I decided to give it a shot.  In fact when I bought it I had originally intended to make chia pudding with it (something else I’ve never tried).  You’ll note that this is not a post about chia pudding.  I changed …
