S’more Cookie Bars

What’s the first dessert that comes to mind when you think of summer?  For me, it’s a s’more. Le’ts address the elephant in the room first.  For all my life I’ve called it a s’mores.  To be clear I thought it was like deer or moose.  I thought s’mores was both singular and plural.  Wikipedia has now corrected me.  It’s a s’more (no “s” at the end).  I learn something new everyday.  😉  If you’re my husband (the Pixar fan) then you may also refer to them as schmoes. Blueberry Crumb Bars

I’ve got a cheater’s way of making blueberry pie.  Interested? Oatmeal Peanut Butter Chocolate Chip Bars

Classic Rice Krispies Treats

Are you ready for a blast from the past? Coconut Chocolate Chip Bars

I’m celebrating Friday with chocolate and coconut (not that I really need a reason to have chocolate). These bars are little squares of cakey goodness.  But guess what?  There is no wheat flour going on here.  They are made with coconut “flour.”  They get their sweetness from the coconut flakes, chocolate chips and maple syrup instead of piles of sugar.  Crazy, right?  Well to me it sort of is because I’m used to baking with flour, butter, and sugar.  You know, all the fatty delicious food groups.
