Single Serving Whole Wheat Chocolate Chip Cookie

Holy cow, guys… my blog is three years old today! I’ve been thinking about how to memorialize the occasion.  Should I give advice to my fellow bloggers?  Should I share what I’ve learned over the years?  Let’s face it, the answers to those questions seem like they’d be long and drawn out and I don’t want to bore you guys.  The short answer is that I’ve learned more about blogging and myself than I ever thought I could.  It has been quite a journey so far and I’m very proud of how far Tina’s Chic Corner has come. As on …

Soup Roundup

I’ve never posted a recipe roundup before.  I figure if you are looking for a specific recipe then you’d simply search my recipe index.  The other day I realized that I haven’t been making any soup this season.  That got me thinking.  You guys might like to see a “one stop shop” (so to speak) of the best soups I’ve shared in the past.  Of course feel free to look over my complete recipe index of soups too. So without further ado…. Here are my top 7 favorite soups (in no particular order). Pasta Fagiloi Soup 2.  White Bean and Pasta …

Falafel-Spiced Roasted Chickpea Salad

I’ve been on a salad kick lately. Maybe I’ve trained my brain to crave salads since I’ve been trying to eat healthier this year.  Hmm, that’s probably wishful thinking on my part.  After all, we’re only 48 days into the year (not that I’m counting).  I’m sure I’ll go back to my normal pizza and bagel cravings in no time.  In the mean time, I’m cashing in on the fact that I would actually prefer to eat vegetables.  (Who am I?) These chickpeas totally make this salad.  I love chickpeas but they are on a whole other level when you roast them with …

Ham and Cheese Pockets

I’m a glutton for punishment. I first made hand pies back in 2014 with a strawberry filling.  They are freaking awesome.  However, they are a pain in the butt to make, at least for a perfectionist like me.  I roll out the pastry dough, measure, then re-roll, then re-measure, again and again, down to the milometer.  It’s not hard to do but it’s undeniably frustrating.  I pretty much swore I’d never make them again. The problem is that you find yourself wanting to make new kinds of pastry with this dough because it’s that amazing.  (If you can really call that …

Paleo Chocolate Chunk Cookies

Let me head you off at the beginning, I’m not following a paleo diet. Truth be told I can’t even say the word “paleo” correctly.  I thought it was pronounced as pa-lay-o, emphasis on the lay.  One day my husband corrected me.  It’s pay-lee-oh, you know, like the era before the dinosaurs?  Well, I have a mental block now so I still say it wrong, every single time, and my husband kindly corrects me every single time.  I swear I’m actually an intelligent person and can be taught.  Just not this time.  😉 Yesterday my girlfriend asked me where I …
