Asparagus And Peas Medley

I’ve been cooking a lot of fresh veggies and fruits lately and I’m loving it.  I can hardly remember what I used to cook before I had this luxury.  This dish follows this same pattern and it’s Springtime cooking at its finest.

The quinoa is accompanied by a medley of asparagus and peas and is covered in a lemon dressing.

Asparagus And Peas Medley Recipe
(About 4 servings)

Ingredients for the Dressing and Topping:

  • 1 to 2 fresh lemons (the goal is 1/4 cup lemon juice and the zest of 1 lemon)
  • 1/4 cup olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 scallions, chopped
  • 1/4 cup Kasseri cheese, shredded

Ingredients for the Peas And Asparagus Dish:

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 and 1/2 cups peas
  • 1 bunch of asparagus, cut into 1 inch pieces
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Ingredients for the Dressing:

  1. In a small bowl, add the zest of 1 lemon.
  2. Add the juice of 1 to 2 lemons.  (The goal is to get about 1/4 cup lemon juice.)
  3. Add in the oil.
  4. Season with salt and pepper.  Whisk all of the ingredients together.

Directions for the Peas And Asparagus Dish:

  1. Prepare the quinoa according to the directions on the box.  (Note, I use vegetable broth because I think it makes the quinoa taste better, but water is also fine.)
  2. In a medium pan, over Medium heat, heat the oil.
  3. Add the peas and asparagus.
  4. Season with the salt and pepper.  Stir all of the veggies so that they’re all coated with the oil and cook them until they are slightly tender.
  5. Add the cooked veggies and quinoa to a serving bowl.
  6. Pour the dressing over all of the ingredients.
  7. Stir in the chopped scallions.
  8. Sprinkle the top with the shredded Kasseri cheese.

 

Holiday baking and shopping is now replaced with yard work.  Blah, I hate weeding.  No matter what time of the year it is, we always seem to be busy so quick meals are key for me.

I’m always trying to find ways to use quinoa and I thought it would be great to incorporate it in this vegetarian delight.  Quinoa is loaded with iron and protein.

This simple lemon dressing is a great way to add a lot of flavor with a Spring flair.  The quinoa and veggies absorb all that lovely lemony zing.

I topped the dish with shredded Kasseri cheese.  It’s a Greek cheese very similar in taste and texture to Provolone cheese.  You can absolutely use Provolone or Parmesan instead, or for that matter any other hard salty cheese you like.

  11. Quinoa is possibly one of the best ingredients around. You say ‘Spring Dish’, I say ‘Autumn Dish’, looks so fresh and tasty, perfect side to a wintery warmer. 🙂

      Yup, it all depends on where you live. 😉 Maybe some are lucky to have delicious fresh asparagus all year long (like California). Unfortunately, living in Connecticut means fresh veggies only half of the year (Spring/Summer), but I’ll take advantage of it while I can. 🙂
