Blondies For Two

I want to bake a dessert for me and the hubby but I don’t want to make an entire cake or tray of brownies for just the two of us.  Don’t get me wrong, as much as I’d love to consume an entire Apple Cake, my scale would hate me.  These delicious blondies are the perfect solution.

You use a loaf pan to make only 8 blondie bars!  How cool is that?  It’s just enough to satisfy a sweet craving and you don’t have loads of leftovers to tempt you.

Have you ever had a blondie bar before?  They are sort of like a chocolate chip cookie in convenient bar form thanks to all that delicious butter and brown sugar.  They usually use a bit less butter than their cookie counterparts, so the the texture is a bit more like a brownie.

I made blondies once last year, a different recipe than this one and I thought that they were tasty at the time (in fact I still do).  However, I never made them again and never understood why until after eating this batch of blondies.  These blondies are way better.  I think it’s mostly a texture thing here.  (Hey, I’m entitled to change my opinion.     😉 )  These blondies are chewy but you don’t feel like you are eating raw cookie bars and the sweetness is spot on.

Yes, there is one missing in the photo below.  My boo was hungry because I’d been ignoring him all morning taking hundreds of pictures of these bad boys.     🙂

I already had all the ingredients handy.  That’s good because I really didn’t feel like making a fuss about it and having to go to the grocery store.  (I’ll save that for another day.)

I have to say that I am loving this particular combo with the pecans and sweetness from the milk and white chocolate chips.  Although, these bars are a great way to get rid of those last few nuts in the bottom of the old bag or various flavored chocolate chips that you can’t figure out how to use up.  The possible combos of goodies are almost limitless (almost).

I whipped up these bad boys in no time at all.  You don’t need to drag out the hand mixer.  You don’t need to chill the dough.  You don’t even need to wait for the butter to come to room temperature because you use melted butter here.  Plus, these only take about 20 minutes in the oven!  You can’t get easier or faster than that.

It seems as if my solution of a “blondie for 2” has presented a problem though.  These were SO good we wished that we had more, even though that would kinda defeat my initial intentions.     😉

08Blondies for Two

Blondies For Two Recipe
(Makes 8 bars)

Ingredients:

  • 1/2 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons butter, melted
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 and 1/2 teaspoons vanilla extract
  • 1/3 cup pecans, chopped
  • 2 tablespoons semisweet chocolate chips
  • 2 tablespoons white chocolate chips

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9 x 5 inch loaf pan and set it aside.  (If you don’t plan on cutting the blondies right from the pan, then cover the loaf pan with parchment paper in order to remove it in one piece.  Still grease the parchment paper.)
  3. In a medium bowl, whisk together the flour, baking powder, and salt.  Set aside the dry ingredients.
  4. In a big bowl, melt the butter.
  5. Whisk in the light brown sugar.
  6. Whisk in the egg and vanilla extract.
  7. Stir in the dry ingredients, using a spatula or wooden spoon, just until combined.
  8. Gently fold in the pecans, semisweet chocolate chips, and white chocolate chips.
  9. Pour the batter into the prepared pan and bake for 20 to 25 minutes or until a tester inserted comes out clean.
  10. Let the bars cool in the pan, prior to cutting into it.

  3. I love that you have done this so that there are not loads left over. That’s why I don’t bake very often, as I don’t want loads leftover, which I would end up eating.
