Time for a bit of nostalga. This is one of those dishes that can feed a family on the cheap and doesn’t take much time to prepare. It’s perfect for a busy family on a budget. Summer Ratatouille

I took the classic ratatouille and turned it into a summer delight. A long time ago I made ratatouille over polenta. It was delicious and beautiful. However, to be honest I haven’t made it since because it is kind of a pain to make.
