Mediterranean Grain Bowls With Chicken

I never remember how to spell “Mediterranean.” I love Mediterranean food. Give me anything with feta cheese, olives, and hummus and I’m a happy girl. Well, almost anything. It’s a shame (and quite frankly annoying) that I need spell check to remind me how to spell something that I make often, like these grain bowls. I will definitely be making these on a regular basis because they are so delicious. Picture a Greek salad with warm quinoa, grilled chicken, and hummus. Yum! Since I work from home now, I take more time each day to make my lunches because it’s …

Oven BBQ Chicken

Hello, tasty food. Yes sometimes I talk to my food. 😉 I like to make a lot of homemade recipes. (Uhm, hello, food blogger.) However, I’m not compelled to make a homemade BBQ sauce when I’ve found a great brand that does all the work for me. Now if you want to make your own BBQ sauce, kudos for you and this recipe will still work for you. BBQ sauce + chicken thighs = good eats. It’s really that simple. It’s a delicious crowd pleaser so if you’re looking for an easy dinner to pull together for some picky eaters, …

Greek Chicken and Rice

Happy Friday! I found a new chicken recipe that I simply had to share with you. You marinate chicken breasts in a lovely lemon and herby vinaigrette for 30 minutes and then you cook them in a skillet on the stove top. It’s mad easy and delicious. I think marinating is the key because it makes the chicken taste good (and not so chicken-y). (If you know, you know.) The chicken is served with rice and a fresh tomato, cucumber, bell pepper salad, feta cheese, and Kalamata olive salad. I think that this is a great recipe to kick off …

Roasted Vegetables Salad with Avocado Dressing

I’ve been craving salads lately. I wonder how long that will last. I love roasted sweet potatoes and vegetables. They are an awesome side dish, but I’m turning them into the star of a salad today. Add the hot the veggies straight from the oven to the lettuce and it wilts it a bit which is absolutely delicious. It doesn’t even feel like I’m eating a salad. You can roast whatever vegetables are in season to make this different and seasonally appropriate. I topped the salad with some shredded Parmesan cheese and homemade avocado dressing. I’m not always in the …

Spinach Balls (Spanakokeftedes)

I first made these spinach balls over 20 years ago and here I am making them again because they are awesome. Actually, I sort of forgot about them, which is weird because it’s not for lack of greatness. Does that ever happen to anyone else? Something sparks your memory of a food and you say, “Hey, remember that? That were good. Why has it been so long since I’ve made it?” Of course there is no good answer, so you just move on with life until you think about it again. These spinach balls may not be the prettiest looking …
