Chocolate Chip Banana Bread Muffins

I know what you’ll be making this weekend.  These muffins, hint, hint.  😉 I bet many of you have made banana muffins before.  Show of (virtual) hands?  I know I sure have made my fair share of muffins, especially of the banana variety.  A few years ago, I shared a banana muffin recipe where the muffins are loaded with pecans and a streusel topping.  Then there’s the small batch of banana muffins which is awesome if you have one rogue ripe banana that’s one step from the garbage.  Let’s not forgot our chocolate lovers, because my double chocolate banana muffin recipe is pretty much the best …

Whole Wheat Mini Pumpkin Muffins

The age old question this time of the year, are you a pumpkin or apple food person? Pumpkin pie, apple cake, pumpkin cookies, apple pie… there are so many delicious goodies and so little time.  I love them all.  I will say that I’ve never found an apple muffin that rocked my world, but I do love pumpkin muffins.  I’ve made a variety of pumpkin muffins over the years but this is the first time I’ve made whole wheat pumpkin muffins.  I’ve never made whole wheat muffins of any flavor actually, so I thought I’d try something different. I made these chocolate chip muffins the other day and they have fewer calories than your average chocolate chip muffin.  I’m always …

Small Batch Banana Muffins

What do you do when you have one overly ripe banana left and it’s gotten too gross looking to eat? You make a small batch of banana muffins!  A batch of four muffins is the perfect amount for me and my sister. If you’re like me then you already have all of the ingredients on hand, even that handy dandy last banana that’s been sitting on the counter begging to be used.  You don’t even have a lot of dirty dishes to wash when you’re done.  That may sound silly but sometimes I’ll skip a recipe if it looks like …

Double Chocolate Banana Muffins

I can’t resist chocolate, even if it’s for breakfast.  Can you? I made double chocolate banana bread topped with peanut butter icing and mini peanut butter cups a couple of years ago.  Oh, it IS as delicious as it sounds.  I’ve been meaning to turn the recipe into muffins because who wouldn’t want the same tasty deal in a convenient grab it and go form? It might not look like it from these muffins but I’m still trying to stick to my “new year’s resolution” of eating healthier.  I use that phrase in quotes because I make that resolution on a …
