June Favorites

Happy Wednesday!  Today, I thought that I’d share some of my recent (and random) favorite things with you. Shirts that are dresses.  I love this Express’ shirt dress so much that I bought it in black and in a print.  It’s super flattering, comfortable, and versatile.  You can wear the dress with heels for a summer wedding or with flats or espadrilles for a more casual occasion.  My husband says that this dress looks like a long shirt.  He described himself as “the opposite of someone with any fashion sense,” but he’s not wrong.  That’s why “they” (the fashion industry?) call this style a shirt …

Breakfast Pizza

Have you ever made a breakfast pizza?  It’s life changing. I took all of the usual egg breakfast suspects, added some mozzarella cheese, put it all on a piece of Naan bread, and I’m calling it a breakfast pizza.  Guys, this is my favorite breakfast right now.  No joke. As with any personal pizza, you can dress it up however you like.  If you want to skip the bacon, then go for it.  If you want to add waffles on top instead of eggs and potatoes, then…  well, a carb on top of a carb might be weird but I say do …

B&B Mini Vacation

Have you ever stayed at a bed and breakfast?  Every now and then my husband and I get the itch to get away from reality for a couple of days.  All we want to do is relax and eat delicious food.  For us the perfect answer is to stay at a B&B.  We’ve been to a few in VT and CT, but this time we headed to the Deerfield Inn, in Massachusetts. We stumbled upon Champney’s Restaurant & Tavern by accident last year, on our way home from Quebec City.  We were looking for a place to eat and didn’t want …

Low Calorie Mini Chocolate Chip Muffins

Are muffins for breakfast or dessert?  This has been an ongoing debate with my husband. I think muffins are intended to be for breakfast (but can really be eaten at any time of the day) and my husband says they are more of a dessert.  Muffins are like cupcakes without frosting so I see where he is coming from.  However if coffee shops entice you to buy them with your morning coffee then I stand by my theory. I made these chocolate chip muffins the other day and they have fewer calories than your average chocolate chip muffin.  I’m always …

Memorial Day Recipes

What are your plans for the long holiday weekend?  I’m going to get some much needed rest and relaxation.  Since it’s the unofficial start to summer, aka BBQ food season, I thought I’d share some of my favorite recipes (with some never before seen photos) that are perfect for summer and especially this weekend. Eggplant Caprese.  So simple but SO good. Strawberry Daiquiri.  Gorgeousness, right? Mexican Corn and Quinoa Salad.  Anything with corn goes.  I’m obsessed with corn on the cob so you’ll likely be seeing  a lot of it once it’s in season. Summer Barley Salad. Yup, another recipe with corn …
