Brussels Sprouts Melt

When I think of a sandwich, I think of something made with some sort of cheese, meat, condiments, and bread.  That’s fine and dandy but it’s too predicatable and I’m looking for a something more unexpected today.  (Ah, the life of a food blogger.)  When I made my Tomato and Herbed Goat Cheese Sandwich a few weeks ago, I realized that a sandwich can be so much more than the garden variety deal you might find at a Subway chain restaurant.  With some fresh Brussels sprouts on hand and the desire to create a unique sandwich, I came up with this one.

I’ve laid a big pile of cooked Brussels sprouts and onions onto some hearty bread and topped it with melty mozzarella cheese.

Brussels Sprouts Melt Recipe
(Makes 4 sandwiches)

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 large onion, sliced
  • 3 and 1/2 cups Brussels sprouts, sliced (I used about 8 large fresh ones)
  • 3 cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 slices of bread (I used a hearty garlic bread from a bakery)
  • 4 ounces mozzarella cheese

Directions:

  1. In a medium pan, over Medium heat, heat the oil.
  2. Add in the sliced onion and cook until slightly tender.
  3. Add in the sliced Brussels sprouts and minced garlic.
  4. Season with salt and pepper.
  5. Cook until slightly browned and tender, stirring occasionally.
  6. Set the oven to broil.
  7. To build each sandwich, place 1 slice of bread on your work surface.
  8. Place 1/4 of the Brussels sprouts mixture on top of the bread.
  9. Add a layer of mozzarella cheese on top.
  10. Place the assembled sandwich bottom on a cookie sheet, leaving the top of bread next to it and place in the oven for about 7 minutes or until the cheese is melted and slightly browned.  After about 1 to 2 minutes remove the plain bread.  Watch it carefully it tends to go from not toasted to charcoal very suddenly.
  11. When you remove it from the oven, place the top slice of the bread on top of the sandwich.

 

Brussels sprouts.  You either love them or hate them.  If you don’t love them, I understand.  Hopefully I’ll catch you on one of my next posts.  (Heads up, Friday’s post will be an awesome gluten-free chocolate dessert.)  If you love them, then hopefully this is a fun new way to have them.

My husband and I love The Big Bang Theory.  We must have seen every episode five times each by now thanks to reruns on TBS.  There is one episode where Sheldon attempts to live longer by eating lots of Brussels sprouts.  The hysterical part is that Leonard thought Sheldon may have appendicitis when in fact he simply needed to fart from consuming all those Brussels sprouts.

Look at all that melty cheesy goodness!  If the Brussels sprouts aren’t enticing you then you have to at least give it to the cheese.     😉

What’s the first thing that comes to mind when you think of a sandwich?  (I’m going to bet it’s not Brussels sprouts!)

  5. How unique and tasty, Tina! I always seem to have the best of intentions to eat brussels more often, but never get around to making that happen. I think this sandwich will change that! Love that melty mozzarella, too!

  8. yum!!! I always throw veggies into my grilled cheese (or melts!). Have you tried it with asparagus?! So yum!

  13. I love this creative sandwich! I’m a big Brussels sprout lover and I could probably live on cheese! I would have never thought to combine the two together and put them between two pieces of bread, but I really love it!
