Who’s up for a boozy beverage to get you started on this Monday!  I know I am.

This cold and snowy weather has got me reminiscing about our Turks & Caicos vacation.  Boy, I wish I was on a beach with a frozen cocktail in my hand.  Since I can’t be there I thought I’d bring the beach to me.  Well, sort of.  I’ll enjoy the drink, close my eyes, and pretend I’m at the beach.

The resort we stayed at made an awesome frozen cosmopolitan.  Of course I’ve heard of cosmopolitans (hello, Sex in the City), but never in a frozen form.  I was completely impressed and I knew I had to recreate it at home.  In fact, I even said the that very same thing in my post about our vacation.  Here I am, a woman of my word (eventually).  😉  Let’s face it, I’m really in it for the drink.

If you like a cosmo then this is a no brainer… you’ll love this frozen version.  If you use plain vodka, the cranberry and citrus flavors are subtle.  If you use a flavored vodka then the flavors will be a little more intense.  Either way, it’s a win and a delicious cocktail.

The slushy ice will separate from the liquid a bit but that’s what happens, especially if you’re sipping it in hot temperatures on the beach.  My solution is to drink it fast.  My husband rightly points out that drinking it fast is not an especially good idea unless you really like brain freeze.  So, let’s go with drink it responsibly and accept that it will separate.

Not only did I celebrate a two year anniversary of Tina’s Chic Corner last week, but I also celebrated a birthday.  That put me in celebration mode so I didn’t post anything on Friday like I normally would have.  I hope this pretty pink cup of boozy amazing makes up for it.

Even though I wish I was on the beach, I’m not ready to be in a bathing suit.  Perhaps this is a good reminder to start eating healthier since bathing suit season is right around the corner.

Frozen Cosmopolitan Recipe
(1 serving)

Ingredients:

  • 2 ounces cranberry juice
  • 1/2 ounce fresh lime juice
  • 1 and 1/2 ounces vodka (plain, orange or citrus)
  • 3/4 ounces triple sec
  • about 1 cup of ice

Directions:

  1. Place all of the ingredients in a blender and blend everything until it forms a slushy consistency.
