Little Carrot Cake

If you are looking for the perfect carrot cake but in a little version, then this is it. Last year I shared a recipe for carrot cake, which in its normal size and glory was a huge hit. I wanted the same exact deliciousness but a smaller version of it. Thanks to my handy husband, he scaled the recipe down to this 6 inch cutie. This carrot cake is so moist and delicious. It’s a pure carrot cake at its finest, meaning that there are no raisins, nuts, coconut, pineapple, or other similar ingredients that you might find in carrot …

Buffalo Ranch Chicken with Goddess Dressing

What are you having for dinner? I’ve said recently that I’m craving warmer weather and lighter foods, but I’m still hanging on to cozy sweaters and comfort food. I think this buffalo ranch chicken ticks off the boxes for being both a fresh and comfort food kind of meal. If you’re looking for a dinner idea, no matter what time of the year, then I highly recommend this chicken. You’ve got crispy (when it’s fresh from the oven) baked chicken, seasoned with hot sauce and ranch-like spices. Comfort food, check. I enjoyed it with a salad (lettuce, carrots, tomatoes, avocado, …

Mediterranean Chicken and Chickpeas

Are you in a food rut? The other night my husband asked me, “What do people eat for dinner?” That was a hint to me that we’re in a food rut. I’ve been feeling it too. The chicken and chickpeas are covered in loads of warm spices. I added couscous, mini tomatoes, and homemade guacamole to the party. The leftovers are great to add to a salad …

Chicken Keftedes – Meatballs

Guys, I think these are the best little meatballs I’ve ever made. This recipe intrigued me. These little meatballs are made with ground chicken and are seasoned with onions, mint, parsley, coriander, cumin, and lemon. Coriander and cumin for a Greek meatball? I found that unusual so I knew I had to try it. These meatballs are so delicious. The mint and parsley are definitely the key flavors which are quite lovely and very quintessentially Greek. You don’t taste the coriander or cumin. Maybe that’s a good thing? Or maybe they do help what was otherwise boring ground chicken and …

Tuna Lettuce Wrap

I am craving Spring. I’ve got some Spring décor up in my home. I’m getting my Spring/Summer wardrobe ready too. I’m also craving fresh food, like this tuna lettuce wrap. I added avocado and mini tomatoes to the tuna wrap and topped it with one of my favorite homemade dressings, cilantro vinaigrette. (Now with its own post!) You can really change it up by adding whatever veggies and toppings you want or swapping in your favorite dressing. I’m calling this a “wrap” but I always end up putting too much stuff in it to be able to close it. I …
