Fall Harvest Salad With Maple Mustard Vinaigrette

It’s that time of the year where many of us are in a frenzy with Thanksgiving foods. If you are looking for recipe ideas then check out my holiday meal post for some great ideas. My husband and I will be visiting with family on Thanksgiving day and I’ll be bringing pumpkin pie. I’ve made it every year for the past 10 years or so and it’s my #1 must have every year. Anyway, I digress. I’ve got pie on the brain. Can you blame me? 😉 This salad is Autumn on a plate. I guess it’s really the butternut …

Buffalo Caulifower

I have two recipes for you today. Do you want a scrumptious sandwich or appetizer? Or both? I don’t blame you if it’s hard to decide so I suggest both. I’m getting ahead of myself because I’m super excited about this recipe. I should tell you what’s going on here. From the pictures, this may look like a fish or chicken sandwich, but it’s actually vegetarian. It’s good old cauliflower. If you want sandwiches, then you slice a head of cauliflower into thick slices. The outer slices will fall apart so that’s a little annoying and also kind of unavoidable, …

Corn and Arugula Salad

I’m kind of sorry for sharing so many salad recipes. I know it’s one note-y but my blog reflects my life and salads are my life at the moment. This salad makes for a great appetizer or side dish, but it’s a typical lunch for me lately. I might add some leftover chicken or chick peas to give a protein kick. I’m enjoying all of the fresh veggies that summer has to offer. Doesn’t this look like summer on a plate?! Before you know it, we’ll be talking about holiday cookies 24/7 around here. Until then, what’s your favorite salad …

Spinach Balls (Spanakokeftedes)

I first made these spinach balls over 20 years ago and here I am making them again because they are awesome. Actually, I sort of forgot about them, which is weird because it’s not for lack of greatness. Does that ever happen to anyone else? Something sparks your memory of a food and you say, “Hey, remember that? That were good. Why has it been so long since I’ve made it?” Of course there is no good answer, so you just move on with life until you think about it again. These spinach balls may not be the prettiest looking …

Mini Pepper Nachos

If you are looking for a healthy appetizer recipe then I’ve got one for you. I love good old fashioned nachos, but sometimes I want something a little more on the healthy side. That’s where these mini pepper nachos come in. They are exactly what it sounds like. You replace the chips for little adorable bell peppers. Then you top the little guys with whatever your heart desires, you know, all the typical nacho toppings. Keep in mind that the toppings determine if it’s truly a “healthy” appetizer. I used ground turkey and low fat cheese to stick with the …
