One Pot Pasta

Living without a refrigerator stinks.  Ours broke down about two weeks ago.  It took about one week to get someone out to look at it and then another week to wait for the replacement part to come in.  My husband and I resorted to eating out for dinner for the time with no fridge.  At first I was annoyed about eating out every night, but then I realized it was quite nice because it meant that I didn’t have to cook!  Now that the fridge is fixed, guess who doesn’t want to cook? I stumbled across this pasta recipe on pinterest.com …

Skillet Chicken Tikka Masala

My husband and I love Indian food.  To give my hubby credit, he was the one who introduced me to the cuisine.  There is a great Indian restaurant about 25 minutes away from us.  It may not sound far, but for some reason or another we don’t find ourselves feeling up to the drive.  Instead, I thought I’d take a stab at making some Indian food at home. This chicken is smothered in a creamy Indian flavored sauce. Skillet Chicken Tikka Masala Recipe (4 servings) Ingredients: 1 and 1/2 pounds boneless, skinless chicken, cubed salt, to season the chicken pepper, to season the chicken …

Baked Cauliflower

I hate thunderstorms.  I gasp for air every time I see a flash of lightening and I jump every time there’s a loud thunder boom.  Yes, I have the heart of a church mouse.     😉  Unfortunately it’s the time of year when thunderstorms are normal and frequent so I’ve been in rare form the last few nights. When I’m afraid or my nerves are running rampant, I like to turn to some good old comfort food to make me feel better.  Isn’t baked ziti some of the best comfort food out there?  I think it is, but don’t get too excited for it.  While …

Greek Quinoa Salad

I seem to always have food on my mind, whether it’s something I want to eat or a recipe that I want to create.  I’d say it’s a food blogger thing but I’ve been this way since before I had my blog.  I guess I’m just a big fan of food. The other day I was thinking about lunch time at about 10 am.  I was in the mood for quinoa and I was craving Greek food.   I used to hate quinoa a few years ago so it’s funny that I look forward to creating new recipes with it.  Just goes …

Thai Sweet Chili Chicken

Traditional grill food (i.e. BBQ stuff) doesn’t really tickle my fancy.  Don’t get me wrong, I love me a good burger, potato salad, and watermelon, but I don’t generally crave it.  Instead I’d prefer a stir fry dish, like this delicious Thai meal. This stir fry contains chicken, red peppers, and mandarin oranges and it’s coated in a sweet and spicy Thai Chili sauce. Thai Sweet Chili Chicken Recipe (About 4 servings) Ingredients: 2 tablespoons sesame oil, divided per the directions 1 pound chicken, sliced 1 red bell pepper, sliced thin 1/2 tablespoon fresh ginger, grated 1 cup Thai sweet chili sauce (I …
