Roasted Cauliflower and Pasta

I have Spring fever!  Who else is with me?  If you live in a warm area, I’m super jealous because Spring isn’t showing any signs of arriving where I live. The stores are in full swing with their pastel and floral lines, even including bathing suites (but let’s not go there right now) and it’s got me anxious to get my Spring fashion groove on.  However, I can’t exactly wear a light weight mint colored blouse when it’s 21 degrees F.  Dang, that’s cold. I’m also craving Spring-y foods, like fresh herbs, fruits, and veggies (which are hard to come by in CT at this time …

Healthy Taco Bowl

Tacos are awesome.  It’s just that simple. There are roughly a bazillion ways to make a taco.  (Yes, “bazillion” is a technical term.)  You can go balls to the wall on calories and toppings.  You can make it vegetarian.  You can even do a non-Mexican take on a taco (which I love but I admit that always plays with my mind a little). Today I chose to enjoy tacos in a healthy and a lazy way.  By lazy, I mean, I simply threw all of the ingredients into a bowl (or actually a plate) instead of taking the time to make individual taco shell style …

Sausage And Tortellini Soup

Did you watch the playoffs yesterday?  Both games were awesome (seriously, they won it in overtime!?), but especially the one where the Patriots won because my husband and I are fans! I won’t bore you with football talk.  You may not be into it.  Quite frankly, as much as I love watching it, I’m not entirely familiar with all the game lingo so I won’t be trying to impress you.  😉  Right now, I’d actually rather talk about soup… a topic I’m WAY more familiar with. The tortellini totally makes this soup.  How could it not?  Hello, it’s tortellini.  I …

Veggie Pizza

Pizza.  Isn’t it the best food to eat while you’re watching football?  It sure is. Who am I kidding?  Pizza is perfect 365 days a year, no matter the occasion.  Football is just a good excuse. It’s sort of a tradition for my husband and I to eat pizza while we watch the Patriots play, even if it’s a frozen pizza from the store.  Yes, sometimes I’m lazy.  😉  The last time we made pizza, we went all out with pepperoni, which is my husband’s favorite.  This time we’re going  vegetarian, which is more my thing. Can you tell that the …

White Bean and Pasta Soup

Did you survive your food coma yesterday?  What is it about Thanksgiving that makes it socially acceptable to shove your face with food?  Perhaps it’s because there is so much delicious food served in one day.  Yes, let’s go with that. I don’t know about you, but I’m feeling guilty about all the calories that I consumed yesterday.  I suppose I could have done worse.  I made apple pie (coming to the blog soon!) and I only ate it for dessert.  I say “only” because I could have also gobbled it down for breakfast, pre-dinner snack, or pretty much just taken a …
