Labor Day Recipes

Last week I shared some of my favorite things that I’m looking forward to about Fall.  However, I’m not quite sure if I’m ready for summer to be over.  Mostly I’ll miss the fresh fruits and vegetables that are available locally this time of the year.  With the Labor Day holiday soon upon us, I thought I’d share some of my favorite summer recipes (with some never before seen photos) to enjoy on these last few days of the season.

Corn Guacamole.  Why more places don’t include delicious corn in their guac is beyond me.

Cold Sweet Potato Salad.  Everyone brings a potato salad to the BBQ, but how about a sweet potato one?  Yum.

Frozen Cosmo.   A super refreshing idea stolen fair and square from some resort or other.

Black Bean Burgers.  A vegetarian option that doesn’t even need a grill.

Chocolate Pie.  I have no words, just drool.  Preferably not over the pie, but that’s really only important if you are willing to share.

Peanut Butter and Chocolate Cereal Bars.  This is when you want a fabulous dessert but don’t want to turn the oven on.  How perfect is that for hot days?
