Mayonnaise and I have a strange relationship. Mexican Style Stuffed Sweet Potato

I’ve been on a kick for finding healthy lunch recipes that I can make ahead of time to bring to work and today’s recipe is a new addition to the rotation. Never underestimate a dish built on the foundation of only tomatoes and cheese.  It works for a classic pizza, right? Ragu With Pasta
