Lasagna for Two

This is truly awesome lasagna, only little. I’ve been making this lasagna for over 15 years and there’s a reason for it. It’s so dang delicious. I usually make it around the holidays when we host dinner parties because our guests usually request it (yes, it’s that good). Nachos

Tomorrow is May 1st. Mind blown. Cauliflower and Hummus

Like many of you, my husband and I have tried to adjust to a “stay at home” life. Beans and Pasta Caesar Salad

It’s starting to feel like Spring with warmer temperatures and I’m craving salads. I still crave pizza and ice cream, but it’s all about moderation.  In the meantime, I’m going to take advantage of my salad obsession while it lasts.  I wanted a healthier Caesar salad, i.e. remove the buttery croutons (which is arguably the best part of a Caesar salad).  I replaced them with little pasta shells.  Pasta added to lettuce salad is surprisingly wonderful.  I don’t feel like I’m eating a “salad.”  Keep in mind that this is not a pasta salad though, it’s just got essence of …

Fajita Chicken Bake

Winner, winner, chicken dinner.  Sorry, I had to go there. This chicken and rice dish is very easy and quick to put together.  All you need to do is chop up a few veggies, throw everything into a baking dish, and pop it in the oven.  I love one pan recipes because it means that I don’t have to wash a lot of dishes.  It’s the little victories.
