Cheese Slop

A few weeks ago I shared with you my favorite comfort food as a kid, the Hamburger Pie.  It consists of cheese and ground beef nestled inside crescent rolls or as I like to call it a “fancy cheeseburger.”  The other day my husband suggested we make his mom’s famous cheese slop recipe, which was one of his favorite meals growing up.  Cheese what?  It’s essentially ground beef, pasta, and Velveeta cheese.  It’s funny how one of his favorite childhood dishes has many of the same components as mine.  My hubby took the lead in making it.  (Thanks, love.)  It’s …

Italian Meat Sauce

Pasta Fagioli Soup

My husband and I like to lead a simple life.  Some people strive for drama and chaos, but not us.  I generally make simple meals because I find that small ingredient lists of delicious things make the best meals.  This time however, I wanted an extra simple meal.  There is nothing complicated about a hearty pasta fagioli soup.  This version tastes nearly identical to Olive Garden’s Pasta e Fagioli, full of assorted beans, beef, pasta, and wonderful seasoning. Hamburger Pie

When I was a kid, my sisters and I were allowed to pick whatever we wanted to eat for dinner on our birthday.  This became known in our house as the “birthday dinner.”  As a kid, this made us feel special because that meant we were in charge of household decision. Quinoa and Black Beans
