Cucumber Quinoa Spinach Salad and Lake George Vacation

Salads are a great way to recover from a food coma. Last weekend was our annual vacation to Lake George, NY with my family.   My family and I used to go when I was kid and now we’ve made it a tradition to go once a year as adults with everyone’s families.  We eat, swim (or in my case lay out by the pool), shop, and eat some more.  It is great to get away from reality and relax.  No agenda.  No calorie counting. Mexican Corn and Quinoa Salad

Yesterday’s lunch is today’s post. In fact, since my husband doesn’t like quinoa, the leftovers were today’s lunch too.  I was so excited with anticipation and couldn’t wait for lunch time to roll around.  This salad is that awesome. Summer Salad

Without a doubt my favorite summertime veggie is corn on the cob. Pesto Caprese Zucchini Noodle Salad

I tried a cycle/spin class for the first time.  The good news is that I survived.  The bad news is that I don’t think I’ll ever go again. Greek Sweet Potato Fry Salad

“You don’t win friends with salad.” – Homer Simpson.  Normally I might agree with Homer, but this salad has a better chance than most.
