Chicken Keftedes – Meatballs

Guys, I think these are the best little meatballs I’ve ever made. This recipe intrigued me. These little meatballs are made with ground chicken and are seasoned with onions, mint, parsley, coriander, cumin, and lemon. Coriander and cumin for a Greek meatball? I found that unusual so I knew I had to try it. These meatballs are so delicious. The mint and parsley are definitely the key flavors which are quite lovely and very quintessentially Greek. Tuna Lettuce Wrap

I am craving Spring. I’ve got some Spring décor up in my home. I’m getting my Spring/Summer wardrobe ready too. I’m also craving fresh food, like this tuna lettuce wrap. This cilantro vinaigrette has been a staple salad dressing for the past couple of years. I’ve shared it with a few recipes but I thought that it deserved a spotlight of its own.
