Almond Granola

I often talk about eating cereal for dinner when I’m too lazy to cook (especially if it’s just dinner for 1).  I thought it was high time I made a cereal worth blogging about so I made this almond granola.  It’s a basic granola recipe that is lightly sweetened and loaded with almonds. Almond Granola Recipe (Makes about 3 cups) Ingredients: 2 cups rolled oats (also known as old fashioned oats) 3 tablespoons wheat germ 3 tablespoons oat bran 1/2 cup almonds, finally chopped 1/8 teaspoon salt 1/2 cup light brown sugar 1 tablespoon maple syrup 3 tablespoons honey 1/4 cup oil 3/4 teaspoon cinnamon …

Peanut Butter Muddy Buddies

Is it normal to always have two jars of peanut butter in the house at all times?  I feel like I’m running low when I’m down to one unopened jar.  I guess it means that I love peanut butter… a lot, or I’m just being ridiculous.  (My husband suspects both may be true.)     😉 My latest adventure with peanut butter is this awesome sweet and savory snack.  It’s a combination of peanut butter and chocolate covered Chex with pretzels, and peanut butter M&Ms. Peanut Butter Muddy Buddies Recipe (makes about 5 cups) Ingredients: 1/2 cup semi-sweet chocolate chips 1/2 …

Spicy Sweet Potato Fries With Cucumber Yogurt Dip

Holiday weight gain is evil.  Who’s with me?  I try to avoid having “bad food” in the house, but that’s kind of hard to do if you’re a food blogger and enjoy baking.  It’s even harder to do when friends and family are coming over and expect great food.  So I’ve resorted to moving the jar of Nutella and the bag of mini marshmallows to the top shelf and I can only reach them if I move a chair over to the kitchen cabinet.  I have loads of chocolate chips in a nifty glass container on the kitchen counter and …

Almond Cranberry Granola Poppers

Are these cookies? Are they miniature granola bars?  Call them whatever you want, but I call them amazing!  I love, love, love “things”.  Shocker, I know.  I post a ton of cookie recipes and I’m still on my quest to lose those last darn 10 pounds.  Not the best combo when you think about it.  I wanted to create something that would satisfy a sweet craving and I wouldn’t feel guilty eating it. I used my Peanut Butter Chocolate Chip Granola Bar recipe for inspiration, replaced parts of it with healthier goodies and turned it into these crazy amazing bite …
