Enchilada Pasta Casserole

I realized something the other day.  Every casserole recipe that I am drawn to involves some sort of pasta, some sort of meat, some type sauce or another, and at least one kind of cheese.  Since all these things generally combine into awesome, I’m starting to wonder if there is any other kind of casserole worth eating.     😉 This casserole takes the flavors from a traditional enchilada dish and transforms them into an easy and low fat pasta meal. Enchilada Pasta Casserole Recipe (About 6 to 8 servings) Ingredients: 1 (12 ounce) bag egg noodles (I used No Yolks) 1 pound ground …

Roasted Red Pepper Pasta

Happy New Year!  It’s that time of the year when we list our resolutions.  Some people resolve to eat healthier and others might work out more.  Since I can’t really affect how much you work out with my blog, I wanted my first post of the year to be about a healthy recipe.  In particular, I had this roasted red pepper pasta in mind as that first healthy post.  My husband and I have discussed whether this pasta dish is actually “healthy.”  Let’s just say that it’s better for you than a fully loaded lasagna which is frankly horrible for …

Bow-tie Chicken Alfredo

Who’s rushing around trying to bake and buy gifts for the holidays?  Oh, pick me, pick me!  I have even less time than normal, so dinners must be a quick fix (otherwise we’ll just have cereal, not that there is anything wrong with that).  This pasta and chicken dish is covered in a rich alfredo sauce.  It looks like something right out of a restaurant, but I whipped it up fast in the comfort of my own kitchen. Bow-tie Chicken Alfredo Recipe (About 6 servings) Ingredients: 12 ounces bow-tie pasta, uncooked 4 tablespoons butter, divided per the directions 2 whole …

Pasta With Tomato Cream Sauce

I can’t believe it’s Thanksgiving this week.  Where did the year go?  If you’re like me, you’re running around trying to get things ready around the house, whether you’re hosting or visiting for the holiday.  My husband and I are going to my parents’ house for Thanksgiving day and to my husband’s mom’s house the day after.  I’m in charge of bringing dessert so I’ve been baking my heart away this past weekend. Since I’m short on time (more than usual) I needed to whip up dinner quickly and I wanted something that didn’t resemble turkey and trimmings (because I …

Italian Tortellini Soup

What is your favorite food to whip up when you have a hungry crowd?  Lately, my go-to quick fix is some kind of soup.  It’s the perfect meal to warm you up on these cold days.  I mentioned the other day that my dad was visiting to help me and my husband with a few household chores.  I don’t know about you, but I tend to procrastinate on the house chores.  These chores weren’t fun by any means (not that they ever are), but my awesome dad is always happy to assist, even if it’s something as mundane as re potting a ginormous jade plant! …
